Enchilada Casserole or Lazy Lady's Enchiladas
One night I made enchiladas, and they were delicious, but rolling each one was a little time-consuming, so I had a genius idea. Why not just put tortillas on the bottom of the dish, add all the cheesy goodness in the middle, and then top it with more tortillas and, of course, more cheese?? It turned out great, was quick and easy, and I found that I could fit more filling in the dish!

Duck Pot Pie
This is my mom's pot pie recipe. I was always so excited as a kid when I found out this was on the menu for the week! She's made chicken, turkey, and rabbit pot pie. I decided to mix it up and give duck a try. I used a whole duck for this recipe, so not only did I get meat, but I also saved back the skin to fry up, and the carcass for some yummy broth!

Oven-Baked Pork Steak
Pork steaks are super yummy! They're similar to pork chops. Pork steaks are cut from the shoulder roast and cost less than chops, whereas the chops are cut from the loin, making their price a little higher. You can still enjoy a nice piece of meat that's tender and juicy while saving a little bit of money!

Kim's Favorite Breakfast Quiche
Soooo technically this is a Pillsburry recipe, but it was given to me by my mother-in-law so I think of it as hers. It's so yummy, customizable, and easy! I made my own crust from milled wheat flour, but feel free to use a pre-made crust or omit the crust altogether. You can also get creative with the fillings. Want to try a different cheese? Go for it! I like to use pepper jack. Sausage can also be substituted for the bacon, or you can just do veggies! In the quiche pictured, I used bacon, mushrooms, and green onions. Enjoy!

Hungarian Chicken Paprikash
I had never heard of smoked paprika until a friend of mine gifted me a jar - it smells and tastes amazing! There are actually several varieties of paprika, which is where the profile of this dish could easily be adjusted for more heat if desired! This dish was made on the stovetop, but could also be finished in the oven: once you've added the stock to the breast, pop into the oven at 350 F for 40 minutes. We served ours over rice, because why not?! Recipe is originally from lavenderandmacarons.com, but changed to our liking :)
