Enchilada Casserole or Lazy Lady's Enchiladas

One night I made enchiladas, and they were delicious, but rolling each one was a little time-consuming, so I had a genius idea. Why not just put tortillas on the bottom of the dish, add all the cheesy goodness in the middle, and then top it with more tortillas and, of course, more cheese??
It turned out great, was quick and easy, and I found that I could fit more filling in the dish!

Ingredients
- (1-2 pounds) Ground Beef
- (You could use a package or about 8-10 homemade tortillas) Tortillas
- (1 can) Corn
- (1 can) Black Beans
- (1-2 bottles or your favorite homemade sauce) Enchilada Sauce
- (3 cups) Shredded Cheese (you can use cheddar, or a blend)
Directions
- Preheat your oven to 350 degrees.
- Brown your hamburger.
- Grab a 9x13 pan and grease it, then cover the bottom with tortillas.
- Dump your ground beef, can of drained corn, and can of drained beans onto the tortillas.
- Sprinkle 1.5 - 2 cups of shredded cheese onto the filling.
- Top your masterpiece with remaining tortillas.
- Cover the dish with your enchilada sauce. I like a lot of sauce on mine. Life is too short for dry enchiladas, but use however much looks good to you. I like it to cover everything!
- Sprinkle the rest of your cheese on top.
- Bake at 350 for 20 minutes.
I know these are not traditional enchiladas, but they made for a quick toss-together meal!
You could serve this with sour cream or crema, a side of rice, or just as it is.
