Italian Wedding Soup With Rice
This is a delicious Italian Wedding Soup made with rice instead of pasta, significantly reducing the amount of gluten. You could omit the bread crumbs in the meatballs to make it 100% gluten-free if necessary. Fresh spinach is ideal, but we've also used frozen spinach when fresh is difficult to find.

Ingredients

  • (1 lb) Ground Turkey
  • (1 tbp) Olive Oil
  • (1) Egg
  • (1/2 cup) Bread Crumbs
  • (1/2 cup) Parmesan Cheese
  • (1) Yellow Onion
  • (1 1/4 cup) Carrots
  • (2) Celery Ribs
  • (3) Cloves Garlic
  • (8 cup) Chicken Broth
  • (4 tsp) Italian Seasoning
  • (4-5 cup) Spinach
  • Salt/Pepper to taste

Directions

  1. Mix the ground turkey, shredded parmesan, egg, Italian seasoning (just 2 tsp), and bread crumbs in a medium mixing bowl. Roll into 3/4-inch meatballs.
  2. In a large soup pot, heat olive oil over medium-high heat.
  3. Brown your meatballs in batches for 2 minutes. They will finish cooking in the soup, so you can set them aside for now.
  4. In the same pot, over medium heat, soften the onions, carrots, and celery for about 6 minutes. You may need to add another splash of olive oil.
  5. Now, add the garlic and Italian seasoning. Cook for 1 minute.
  6. Add the chicken broth. Bring to a boil, add the rice, then reduce to a simmer.
  7. Add the meatballs. Simmer gently for about 15 minutes, or until the rice is done cooking.
  8. Finally, stir in the spinach and cook until wilted; about 2 minutes.
  9. Serve hot with freshly grated parmesan cheese. Enjoy!
