The Best White Chicken Chili Recipe We've Tried
This one takes 1st place. If you love chili... if you love cheesy... if you love easy... then this Ultimate White Chicken Chili recipe is for you. It makes plenty and you can throw it together in just 25 minutes.

  • (2 tbsp) Butter
  • (2 tbsp) Flour
  • (1 cup) Half-and-half
  • (3 cups) Chicken Broth
  • (2-4# whole chicken) Whole Chicken, meat pulled off and chopped
  • (2 (15-oz) cans) White Kidney Beans, rinsed and drained
  • (1 (11-oz) can) White corn, drained
  • (2 (4-oz) cans) Chopped green chilies, drained
  • (2 tbsp) Dried minced onion flakes
  • (1/4 tsp) Garlic powder
  • (2 tsp) Cumin
  • (1 tsp) Chili powder
  • (1/2 tsp) Salt
  • (1/2 tsp) Black pepper
  • (2 cups) Shredded pepper jack cheese


HOT TIP: The original recipe calls for a rotisserie chicken to pull the meat off, but instead we cooked a ~3# Whole Chicken in the crock pot for 8 hours on low. Then we pulled the meat off and threw the chicken bones back in the crock pot to make the broth for this recipe as well, saving $$$ while ensuring we got the most nutrition for our chili!

  1. In a Dutch oven, melt the butter and stir in the flour. Cook for 2 minutes.
  2. Gradually whisk in the chicken broth and half-and-half. Bring it to a boil and cook for 2 minutes, until thickened.
  3. Add the remaining ingredients and cook for 10 to 15 more minutes, stirring occasionally.
