Smashed Red Potatoes With Garlic {AKA Crash Hot Potatoes}

This side dish is so good that I made it two nights in a row (and again on the weekend.) It's a quick and simple recipe that takes the classic potato to a whole new level. I'd made smashed potatoes before, but not like these. The term "crash hot potato" was new to me. It's the Australian term for these buttery golden potatoes.

Ingredients
- (1.5 lbs or 6-8) Red Potatoes
- (1/4 cup) Extra Virgin Olive Oil
- Smoked Paprika
- Garlic Powder
- Sea Salt
- Black Pepper
- (3 tbs) Butter
Directions
- Boil your potatoes until soft enough to poke with a fork, 15-20 minutes. You can use any creamer potato, but we love red.
- Preheat your oven to 425* F. Place your potatoes on a greased baking sheet and smash them. I used the bottom of a mason jar. The goal is to get them flat, as thin as 1/2 of an inch. If they "break" instead of "smashing", that's okay - they will taste just as good!
- Drizzle olive oil on top of each potato, then sprinkle with garlic powder, smoked paprika, salt, and pepper.
- Bake in the oven for 20 minutes. Pull them out and put butter on top of each, then bake for another 5-8 minutes or until golden brown and crispy (the crispiness is what makes these so delicious IMO.)
- Serve hot and enjoy!
This recipe makes about 6 servings, although Remi and I typically eat more than we care to admit because they are SO GOOD. Especially if you've been craving carbs but are trying to eat clean, whole foods, this is the way to go.
