Good morning (or afternoon, depending on your location!)

Fall is moving in and nights are getting cooler. I don't know about you, but we've already begun the shift to warm, hearty fall meals. ๐Ÿ˜‹๐Ÿ‚

This is a busy time of year for most people, which means less time to prepare meals. We're in the same boat!

So how do we keep healthy, delicious food on the table without spending hours each day?

Enter the slow-cooker (AKA a mom's best friend) and simple, hands-off meals.

I recently shared a recipe for Mississippi Pot Roast, which is now our favorite way to cook Chuck and Arm Roasts.

But I know that everyone gets tired of roasts eventually, so today I want to share our favorite way to cook Beef Short Ribs.

Short Rib is an underrated cut of beef that is amazing when slow-cooked or braised. It has a lot of tough connective tissue that breaks down when cooked for a long period, leaving you with tender meat that is nutrient-dense and flavorful.

That's it! Really hard to do, I know. If you want to create another step, add BBQ sauce. But honestly, they don't need it. We like to enjoy ours with broccoli and potatoes.

I recommend this to anyone looking to switch up your slow-cooker menu, especially if you've never made Short Ribs before.
